Once again, Taberna del Alabardero is proud to present its monthly wine dinner, an event that has become a highlight for our guests. Each month, we feature prestigious Spanish winemakers and craft a menu designed to showcase their wines alongside our traditional Spanish cuisine.
This month, we are honored to host “The García Legacy Wine Dinner,” an evening dedicated to the extraordinary viticultural heritage of the García family. We are thrilled to welcome Víctor Fernández, the visionary Technical Director and Winemaker of San Román Bodegas y Viñedos. On this exclusive night, Víctor will guide us through the nuances of the family’s most celebrated estates: San Román, Mauro, and Garmón Continental.
Graduating with the highest academic honors in Spain, Víctor has spent nearly two decades perfecting the art of viticulture across the prestigious terroirs of Bordeaux, Argentina, and Bierzo. His philosophy is one of quiet reverence for the land—a seamless blend of biodynamic wisdom and technical precision that yields wines of extraordinary purity and soul. Under his stewardship, San Román has become a benchmark of Spanish excellence, reflecting the meticulous craftsmanship of the García family.
Joining him is a very special friend of the house, Aurelio Cabestrero. Originally from Madrid, Aurelio’s journey is deeply intertwined with our own, having served as the Sommelier for Taberna del Alabardero in Washington, D.C., for three years before continuing his distinguished career at Marcel’s. Today, he is a premier importer of Spanish wines, fueled by the same passion that earned him the Ruinart Prize for Best Sommelier in Spain and top honors from the National Sopexa Competition.
The evening will showcase the distinct character of the García estates. From the opulent, old-vine power of San Román in Toro to the precision of Mauro and the refined elegance of Garmón Continental in Ribera del Duero, these wines represent the pinnacle of Spanish winemaking. Víctor’s approach emphasizes a deep connection to the soil, ensuring that each pour tells the story of the unique terroir from which it came.
